Restaurateur and ChefJohn Fraseris currently looking to fill a Garde Manger position at the newly reopenedNorth Fork Table & Inn. There are many opportunities for growth for the right candidate. The Garde Mangeris responsible foroverseeing the preparation of cold food dishes and ensuring quality while adhering to recipes. Key Responsibilities: Daily preparation for miseenplace for the cold food station. Preparation of salads and sandwiches for the restaurant. Maintainingaccurateprep lists, tastingall ofyour ingredients, and excellence in food presentation. Assistwith staff meals. Maintaina thorough working knowledge of recipes, ingredients, allergens, and food presentation. Ensure that food quality, quantity, freshness, and presentation meet the TIN Building standards. Maintaindepartment cleanliness and organization, adhere to safe work and equipment practices, and follow all food safety,healthand sanitation standards. Properly storeand/or discard leftover food. Setup,stock stations, and replenish kitchen inventory and supplies as needed. Ensure all the products and prepared items are properly labeled, dated, initialed, covered, and rotated following FIFO (first in, first out). Follow all company policies, procedures, and guidelines including being ready to work at scheduled shift, in uniform, as per uniform standards. Complete any other taskgiven withasrequiredina timelyand professional manner. Operateethically to protect the assets and image of the company. Must be able tomaintaina schedule availability flexible to the business demands. Performs other duties and responsibilities asrequiredorrequested. The North Fork Table & Innis nestled in between some of the areas greatest farms and wineries. Southold offers a great opportunity to get out of the city for the summer and enjoy vast outdoor spaces with a handful of beaches near by.
